- Heat the olive oil in a large frying pan. Add the onion and fry for 3-4 minutes, then add the pepper and fry for a couple more minutes. Add the courgette and garlic and fry for a few minutes. As everything starts to cook nicely, add the tomatoes and the Harissa paste. Make sure you season it well.
- When the tomatoes have cooked down into the stir fry to become almost a sauce and the vegetables are all nice and tender, the dish is ready to serve.
