• 1 cauliflower, cut into florets
  • 1 small red onion, finely chopped
  • small handful of capers, drained and rinsed
  • handful of parsley, chopped
  • 6 tbsp olive oil
  • 2 tbsp red wine vinegar
  • 1 tbsp Dijon mustard
  1. First make the dressing by mixing the olive oil, red wine vinegar and Dijon mustard together in a bowl. Season and set aside.
  2. Cook your cauliflower florets in boiling salted water for just 7 minutes, until just cooked. Drain and put into a bowl and whilst still hot, pour over the dressing and mix. Leave it to cool and let the dressing seep into your cauliflower.
  3. Once cool and ready to serve, quickly throw in your red onion and capers at the last moment and mix together. Throw in the parsley, stir and serve.
