Apple & Date Strudels (with Brick Pastry)

- 2 sheets of Brick pastry
1 apple, finely chopped
4 dates, finely chopped
1/2 tsp cinnamon
20g caster sugar
squeeze of lemon juice
15g butter, melted for brushing
icing sugar to dust
- Pre-heat the oven to 200C/180F/Gas 4. Peel and finely chop your apple and put in a bowl. Add your finely chopped dates, cinnamon, sugar and lemon juice and mix it all up.
- Cut your Brick sheets in half. Take one half and place 2 tbsp of the apple mixture onto the sheet in the middle with the long edge at the top. Fold in the sides and roll up to make a parcel. Place on a baking tray, loose edges on the base.
- Repeat with the remaining pastry and apple mixture. Brush each parcel with butter all over. Bake in the oven for 20 minutes or until golden. Dust with icing sugar and serve with custard or ice cream.
