• 1 ripe mango
  • 1 small red onion, hinely chopped
  • 1 mild red chilli, deseeded and finely chopped
  • juice of 1 lime
  • 4 tbsp olive oil
  • 1 handful of coriander, chopped
  • 12 fresh cooked prawns
  1. Peel and dice the mango flesh and put into a bowl. Add the red onion, chilli, lime juice and olive oil. Mix it all together and then set aside at room temperature, covered with cling film for at least 1 hour.  This brings all the flavours and juices together.
  2. Prepare your prawns. Make sure they are all deveind.
  3. Before serving, stir in the coriander. Then fill your spoons or dishes and top each with a prawn, whole or in 2 halves.
