• 1 tbsp olive oil
  • 3-4 sausages, chopped into chunks
  • 100g boiled new potatoes
  • 1 courgette, halved lengthways then sliced
  • 1 onion, chopped
  • 1 red pepper, chopped
  • 1 tsp chilli flakes
  • 1 clove of garlic, crushed
  • 2 eggs
  1. Heat the olive oil in a large, deep frying pan. First fry your sausages until they start to colour. Add you onion and potatoes and fry for 5 minutes. Then add your pepper and your chilli flakes and garlic. Season well and fry for a few minutes. Then add your courgette and fry until everything is nicely cooked through and the potatoes are golden.
  2. Make two wells in the middle of your vegetables and crack an egg into each hole. Fry until just cooked and still with a runny yolk. Season and serve.
