• 1 onion, chopped
  • 1 tbsp olive oil
  • 1 large courgette or 2 small, halved lengthways & sliced
  • 1 green pepper, chopped
  • 4 tomatoes, chopped
  • 1 garlic clove, crushed
  • 1 heaped tsp of Harissa Paste (or more to taste!)
  1. Heat the olive oil in a large frying pan. Add the onion and fry for 3-4 minutes, then add the pepper and fry for a couple more minutes. Add the courgette and garlic and fry for a few minutes. As everything starts to cook nicely, add the tomatoes and the Harissa paste. Make sure you season it well.
  2. When the tomatoes have cooked down into the stir fry to become almost a sauce and the vegetables are all nice and tender, the dish is ready to serve.
